Meatball and Tomato Sauce Over Rice
This comes from Chief Ray Craig of the Springfield, Missouri Fire Department. For a quick, easy, and tasty rice dish this recipe is hard to beat. The Springfield Fire Department suggests serving over egg noodles for an alternative treat. This serves up to 6 hungry firefighters. Just wondering, "What's for Dinner?"
Directions
Ingredients:
1 package of dehydrated onion soup
1 1/4 cup of water
2 eight ounce cans of tomato sauce
1 pound ground beef
1 teaspoon garlic salt
1 teaspoon sugar
1/4 teaspoon thyme
salt and pepper
- Combine onion soup, water, and 3/4 of the tomato sauce in a covered saucepan.
- Bring to a boil, then lower heat to simmer for 10 minutes.
- Mix together meat, seasonings, and remaining tomato sauce.
- Shape into walnut size balls and place in sauce.
- Simmer gently, uncovered for 30 minutes turning meatballs occasionally.
- Serve over fluffy rice.
