Meatball and Tomato Sauce Over Rice

This comes from Chief Ray Craig of the Springfield, Missouri Fire Department.  For a quick, easy, and tasty rice dish this recipe is hard to beat.  The Springfield Fire Department suggests serving over egg noodles for an alternative treat.  This serves up to 6 hungry firefighters.   Just wondering, "What's for Dinner?"

Ingredients:

1 package of dehydrated onion soup

1 1/4 cup of water

2 eight ounce cans of tomato sauce

1 pound ground beef

1 teaspoon garlic salt

1 teaspoon sugar

1/4 teaspoon thyme

salt and pepper

  1. Combine onion soup, water, and 3/4 of the tomato sauce in a covered saucepan.
  2. Bring to a boil, then lower heat to simmer for 10 minutes.
  3. Mix together meat, seasonings, and remaining tomato sauce.
  4. Shape into walnut size balls and place in sauce.
  5. Simmer gently, uncovered for 30 minutes turning meatballs occasionally.
  6. Serve over fluffy rice.
