Macaroni Sausage Casserole

The firefighters in Newport News, Virginia all agree that this is the favorite recipe at Station 3.  We we have to agree it is great.  Lt. Crafford has mastered this recipe and now shares it with you.  You should absolutely give it a try.  So, "What's for Dinner?"

Ingredients:

1/2 pound macaroni

1 pound pork sausage

1 large onion

3 stalks of celery

1 16-ounce can of diced tomatoes

1/2 pound of grated sharp cheddar cheese

salt and pepper

  1. Cook macaroni according to package instructions and drain.
  2. Brown the sausage in skillet while you chop the onions and celery.
  3. After about 5 minutes of cooking the sausage add the chopped onions and celery.
  4. When sausage is done, tilt the pan and remove the excess grease with a spoon.
  5. Add the 16 ounce can of diced tomatoes (with juice from can).
  6. Salt and Pepper to taste.
  7. Simmer for 5 to 10 minutes.
  8. Combine macaroni and sausage mixtures in shallow casserole dish.
  9. Sprinkle grated cheddar cheese on top.
  10. Place in oven and bake at 400 degrees for 15 to 20 minutes or until cheese melts.
  11. Let cool for 8 minutes and serve.
