Ingredients:

1 pound of ground chuck

1 pound of ground pork

2 large eggs

1/2 sweet onion - chopped

1/2 green bell pepper - chopped

2  8-ounce jars of sweet pickled green tomatos

1/2 cup sweet BBQ sauce

1 cup of bread crumbs

  1. Preheat oven to 350 degrees
  2. Mix beef, pork, eggs, 1/4 cup of onions, green bell pepper, 1 eight ounce jar of  picked sweet green tomatoes, BBQ sauce, and bread crumbs in large bowl.
  3. Mix into a football shape and place into a broiler pan.
  4. Take your hand and run an imprint in the center of the meatloaf from end to end. This will help keep the topping on the meatloaf.
  5. Bake at 350 degrees for 1 hour.
  6. In a small saucepan put the other jar of pickled green tomatoes and the other 1/4 cup of onions and cook till it thickens.
  7. After 1 hour, remove meatloaf.
  8. Preheat oven to 375 degrees.
  9. Top meatloaf with the green tomato sauce.
  10. Place meatloaf back in oven that heated to 375 degrees.
  11. Cook for 1 hour.
  12. Let cool for 15 minutes and serve.  Enjoy.
